Beast Herb & Cashew Crusted Rabbit

120 milliliters chicken stock (low sodium)

Rest and finish:
Remove from oven and rest for 5 minutes — this redistributes the juices and keeps the meat tender.

Squeeze 2 tablespoons lemon juice (about 1 lemon) over the top. Serve alongside your base of choice (see goal-based tips below).

Prep the rabbit:
Pat 500 grams rabbit portions (leg or saddle), bone-in completely dry with paper towels — moisture is the enemy of a good crust. Season generously with 1 pinch salt and black pepper and 1 teaspoons smoked paprika on all sides. Let sit at room temperature for 15 minutes.

Build the cashew crust:
In a bowl, combine 50 grams Beast Roasted Cashews , finely crushed, 2 tablespoons Beast Almonds , roughly chopped, 3 fresh garlic cloves, minced, chopped 2 fresh rosemary sprigs, leaves stripped and finely chopped, 1 tablespoons fresh thyme, leaves only, 1 teaspoons lemon zest, and a pinch of salt.
Mix until evenly combined — this is your armour.

Coat the rabbit:
Coat the rabbit: In a small bowl, whisk 1 tablespoons Dijon mustard with 1 tablespoons honey until smooth. Brush this mixture generously over all surfaces of the rabbit portions. Press the cashew-herb crust firmly onto the mustard-coated rabbit — pack it on, don't be shy.

Sear and set the crust:
Heat 1 tablespoons olive oil in an oven-safe skillet or cast iron pan over medium-high heat. Place rabbit portions crust-side up and sear the bottom for 3–4 minutes until golden. Do not flip — the crust stays on top.

Oven finish:
Pour 120 milliliters chicken stock (low sodium) carefully into the base of the pan (not over the crust).

Transfer to a preheated oven at 190°C (375°F) and roast for 25–28 minutes until the internal temperature hits 71°C (160°F) and the crust is deep golden.
